trippa

Trippa (tripe) is a big thing here. It's on a great many menus. So, I figured I had to try it once. (Tripe is the lining of a cow's stomach.) On our tour yesterday, the guide recommended a restaurant to get a good panino and also mentioned that they served good tripe. I did it. I ordered trippa stew. I ate a few bites, and I will be ok if I never have it again.
